A ‘Peachy’ Affair

Here are five different/ special/ unique ways to use peaches for the US summer. And this is an ode to the versatile ingredient that peach is.

A peach with its soft, round, slightly furry fruit with sweet yellow flesh and pink-orange skin can be used in a very flexible manner. They can be eaten on their own or added to a variety of dishes. What’s more, peaches are nutritious and may offer an array of health benefits. The peach flesh is sweet with little acidity, while yellow-fleshed peach typically has an acidic tang coupled with a floral taste which balances the flavours while cooking. Some of the most interesting brilliant ways of using fruits are as follows:

1) Peach and raspberry cream trifle with Basil leaf

An interesting combination of cooking raspberry, peach and basil leaf into a compote. It is then layered alternatively with Victoria sponge, stewed peaches, and crème anglaise creating a magical mélange of flavours.

2) Peach summer rolls

A perfect afternoon snack with fresh peaches tossed in a marination of vinaigrette. All rolled up with lettuce, rice noodles, cucumber, veggies and rice paper.

3) Grilled peach and avocado salad

Fresh peach grilled to perfection with cubes of fresh avocado tossed in a blue cheese dressing with lettuce, asparagus and cherry tomatoes.

4) Tandoori Peach Jhinga

Peach with its acidic tang coupled with a floral taste makes a perfect combination with prawns cooked in a tandoor. A marination of mashed peach with yoghurt, garam masala, spices, Kashmiri red chilli powder and seasoning coated on jumbo prawns and cooked in skewers in a tandoor.

5) Peach and tomato Baked cheese cake

Overripe tomatoes blanched with peaches, cooked with sugar and      spices to a compote consistency. This is then mixed with a mixture of cream cheese, eggs, sugar, fresh peach cubes and poured on cookie base and baked. Serve warm with homemade vanilla ice-cream.
