I recently had an opportunity to sample a meal at Alba in JW Marriott and came away impressed with the taste and flavour of the dishes I sampled. And with the right reason as all this has been curated by the culinary virtuoso, Executive Italian Chef Matteo Arvonio. Chef Matteo Arvonio is a luminary in the world of gastronomy whose roots trace back to the rich culinary region of Piedmont, Italy. Chef Matteo’s culinary philosophy is nothing short of extraordinary, as he deftly marries Italian traditions with a global perspective, infusing flavours from diverse cultures into his creations. Each dish is a testament to his creativity and reverence for the beauty of food, offering guests an unforgettable dining experience that excites the senses and leaves a lasting impression.

Chef Matteo Arvonio’s culinary journey began at the age of 13 under his seasoned uncle’s guidance in Piedmont, Italy. His early exposure fuelled a passion for travel and gastronomy, leading him to the prestigious E. Maggia Institute in Stresa.

Initially focusing on classic Italian and French cuisine, Chef Matteo was captivated by Chef Gualtiero Marchesi’s Nouvelle Cuisine. Drawing inspiration, he developed a unique style emphasizing regional cuisine with an authentic, local essence.

Venturing beyond Europe, Chef Matteo embarked on a transformative decade-long sojourn in Asia, leaving his mark in cities and countries like Shanghai, Mumbai, Maldives and Qatar. Returning to India, his mission is to craft menus embodying Italian, European, and Mediterranean cuisine with a contemporary flair.

Chef Matteo’s approach centres on using premium ingredients directly sourced from local producers, elevating flavours through innovative techniques. Merging elements from Italy, Asia, and beyond, he creates unique dining experiences. Exploring diverse regional cuisines in India, Chef Matteo’s repertoire spans North Indian to coastal, Parsi, Goan, Bengali, and more.
